OK I finally have a workaround for this issue. they do offer VZAccess clients for HP, Lenovo, Toshiba, etc. Verizon Tech support is not aware of any client that have that will work on the Dell Laptops. The Checkpoint forums also have quite afew people with Dell laptops experiencing the same issue, but they were unaware of what was shutting down their VPN Services.

I don't understand why the Dell connection manager wants to stop services that do NOT belong to it. Now I at least know what is causing my Checkpoint client to shut down.I have verified that Dell connection manager is causing my issue as well.
